Ingredients
4 large zucchinis, halved and seeds removed
1 can black beans, rinsed and drained
1 cup corn kernels
1/2 cup salsa
1/2 cup shredded cheddar cheese
1/4 cup fresh cilantro, chopped
Preparation
Step 1. Preheat oven to 375°F (190°C).
Step 2. In a bowl, combine black beans, corn, and salsa.
Step 3. Stuff each zucchini half with the black bean mixture and place in a baking dish.
Step 4. Top with shredded cheddar cheese.
Step 5. Bake for 20-25 minutes until zucchinis are tender and cheese is melted.
Step 6. Garnish with fresh cilantro and serve.
