Ingredients
4 large portobello mushrooms, stems removed
2 cups cherry tomatoes, halved
1 cup mozzarella cheese, shredded
1/4 cup fresh basil, chopped
2 tbsp balsamic vinegar
2 tbsp olive oil
Salt and pepper to taste
Preparation
Step 1. Preheat oven to 375°F (190°C).
Step 2. In a bowl, combine cherry tomatoes, mozzarella cheese, basil, balsamic vinegar, olive oil, salt, and pepper.
Step 3. Place portobello mushrooms on a baking sheet. Fill each mushroom with the tomato mixture.
Step 4. Bake for 20-25 minutes until mushrooms are tender and cheese is melted.
Step 5. Serve immediately.
