Ingredients
2 cans chickpeas, rinsed and drained
1 onion, chopped
2 garlic cloves, minced
1 tbsp olive oil
2 cups vegetable broth
1 can diced tomatoes
4 cups fresh spinach
1 tsp cumin
1 tsp paprika
Salt and pepper to taste
Preparation
Step 1. In a large pot, heat olive oil over medium heat. Sauté onion and garlic until fragrant, about 3-5 minutes.
Step 2. Add chickpeas, vegetable broth, diced tomatoes, cumin, paprika, salt, and pepper. Bring to a boil.
Step 3. Reduce heat and simmer for 15-20 minutes.
Step 4. Stir in fresh spinach until wilted, about 2-3 minutes.
Step 5. Serve hot.
