Ingredients
2 large eggplants, sliced into rounds
2 eggs, beaten
1 cup breadcrumbs
1 cup marinara sauce
1 cup mozzarella cheese, shredded
1/2 cup Parmesan cheese, grated
Fresh basil for garnish
Preparation
Step 1. Preheat oven to 375°F (190°C).
Step 2. Dip eggplant slices in beaten eggs, then coat with breadcrumbs.
Step 3. Place eggplant slices on a baking sheet and bake for 20-25 minutes until golden brown.
Step 4. Spread a thin layer of marinara sauce in a baking dish. Arrange a layer of eggplant slices on top, then cover with more marinara sauce and a sprinkle of mozzarella and Parmesan cheese. Repeat layers.
Step 5. Bake for 25-30 minutes until cheese is melted and bubbly.
Step 6. Garnish with fresh basil and serve.
