Ingredients
4 chicken breasts
2 tbsp olive oil
1 tsp dried oregano
Salt and pepper to taste
1 cucumber, diced
1 cup cherry tomatoes, halved
1/4 cup red onion, sliced
1/4 cup Kalamata olives, pitted and sliced
1/4 cup feta cheese, crumbled
2 tbsp red wine vinegar
Preparation
Step 1. Preheat grill to medium-high heat. Brush chicken breasts with olive oil and season with oregano, salt, and pepper.
Step 2. Grill chicken for 5-7 minutes on each side until fully cooked.
Step 3. In a large bowl, combine cucumber, cherry tomatoes, red onion, olives, and feta cheese.
Step 4. Slice grilled chicken and add to the salad.
Step 5. Drizzle with red wine vinegar and toss to combine. Serve.
