Ingredients
1 cup quinoa
2 bell peppers, sliced
2 zucchinis, sliced
1 cup cherry tomatoes, halved
1 avocado, diced
1 lemon, juiced
2 tbsp olive oil
Salt and pepper to taste
Fresh basil, chopped
Preparation
Step 1. Cook quinoa according to package instructions. Set aside to cool.
Step 2. Preheat grill to medium-high heat. Toss bell peppers and zucchini with 1 tbsp olive oil, salt, and pepper. Grill until tender, about 5-7 minutes.
Step 3. In a large bowl, combine quinoa, grilled vegetables, cherry tomatoes, and avocado.
Step 4. Drizzle with remaining olive oil and lemon juice. Toss to combine.
Step 5. Garnish with fresh basil and serve.
