Homemade Veggie Sushi Rolls

About the Recipe

Ingredients

  • 2 cups sushi rice, cooked

  • 4 sheets seaweed (nori)

  • 1 cucumber, julienned

  • 1 carrot, julienned

  • 1 avocado, sliced

  • 1/4 cup soy sauce

  • 1 tbsp rice vinegar


Preparation

Step 1. In a small bowl, mix soy sauce and rice vinegar. Set aside.


Step 2. Place a sheet of seaweed on a bamboo sushi mat. Spread an even layer of sushi rice over the seaweed, leaving a small border at the top.


Step 3. Arrange cucumber, carrot, and avocado slices along the bottom edge of the seaweed.


Step 4. Roll the sushi tightly using the bamboo mat, pressing firmly to seal.


Step 5. Slice the roll into pieces using a sharp knife.


Step 6. Serve with soy sauce mixture for dipping.
