About the Recipe
Ingredients
16 oz. silken tofu
1/2 cup Amber Maple Syrup
8 oz. semisweet chocolate, melted
2 Tbsp Four Sigmatic Reishi Cacao Powder
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
pinch of fine sea salt
Note: for an adult version, can add 1/2 tsp espresso powder and 1/4 tsp guajillo chile powder
Preparation
Step 1
Melt chocolate using a double boiler, stirring consistently until completely melted. Or, if using a microwave, heat chocolate in a microwaveable bowl on HIGH in 30-second intervals. Stir chocolate in between intervals, until fully melted. Set aside.
Step 2
Process remaining ingredients in a food processor or blender until smooth.
Step 3
While processing, add melted chocolate slowly and process until fully combined, stopping partway through to scrape sides with a spatula.
Step 4
Portion pudding into six ramekins or small bowls. Cover and refrigerate until ready to serve.
