About the Recipe

Inspired by Mark Bittermans Mexican Hot Chocolate Mousse, here's a kid-friendly version with a bit more dimension and nutrition with the addition of Four Sigmatics Reishi Cacao Powder. Feel free to remove the cinnamon if you'd prefer. For a more adult version, see the notes.

  • 16 oz. silken tofu

  • 1/2 cup Amber Maple Syrup

  • 8 oz. semisweet chocolate, melted

  • 2 Tbsp Four Sigmatic Reishi Cacao Powder

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon ground cinnamon

  • pinch of fine sea salt

Note: for an adult version, can add 1/2 tsp espresso powder and 1/4 tsp guajillo chile powder

Step 1

Melt chocolate using a double boiler, stirring consistently until completely melted. Or, if using a microwave, heat chocolate in a microwaveable bowl on HIGH in 30-second intervals. Stir chocolate in between intervals, until fully melted. Set aside.

Step 2

Process remaining ingredients in a food processor or blender until smooth.

Step 3

While processing, add melted chocolate slowly and process until fully combined, stopping partway through to scrape sides with a spatula.

Step 4

Portion pudding into six ramekins or small bowls. Cover and refrigerate until ready to serve.
