Ingredients
1 cup lentils
2 sweet potatoes, peeled and cubed
1 onion, chopped
2 garlic cloves, minced
1 tbsp ginger, grated
1 can coconut milk
2 cups vegetable broth
1 tbsp curry powder
1 tsp turmeric
Salt and pepper to taste
Fresh cilantro for garnish
Preparation
Step 1. In a large pot, sauté onion, garlic, and ginger over medium heat until fragrant, about 3-5 minutes.
Step 3. Reduce heat and simmer for 25-30 minutes until lentils and sweet potatoes are tender.
Step 4. Garnish with fresh cilantro and serve.
