Ingredients
1 cup bulgur wheat
1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 cup red onion, diced
1/4 cup fresh parsley, chopped
1/4 cup Kalamata olives, pitted and sliced
1/4 cup feta cheese, crumbled
Store-bought or homemade falafel
Hummus for serving
Preparation
Step 1. Cook bulgur wheat according to package instructions. Set aside to cool.
Step 2. In a bowl, combine cherry tomatoes, cucumber, red onion, parsley, olives, and feta cheese.
Step 3. Prepare falafel according to package instructions or your favorite recipe.
Step 4. Assemble grain bowls by placing bulgur wheat in the bottom, topping with the vegetable mixture, falafel, and a dollop of hummus. Serve.
