Ingredients

  • 1 lb shrimp, peeled and deveined

  • 2 bell peppers, chopped

  • 1 red onion, chopped

  • 1 zucchini, sliced

  • 2 tbsp olive oil

  • 2 garlic cloves, minced

  • 1 lemon, juiced

  • Salt and pepper to taste


Preparation

Step 1. Preheat grill to medium-high heat.


Step 2. In a bowl, toss shrimp, bell peppers, red onion, and zucchini with olive oil, garlic, lemon juice, salt, and pepper.


Step 3. Thread shrimp and vegetables onto skewers.


Step 4. Grill skewers for 2-3 minutes on each side until shrimp are pink and cooked through.


Step 5. Serve hot.
