Thai Peanut Noodles with Veggies

About the Recipe

Ingredients

  • 8 oz rice noodles

  • 2 cups mixed vegetables (bell peppers, carrots, snap peas), sliced

  • 1/4 cup peanut butter

  • 2 tbsp soy sauce

  • 1 tbsp lime juice

  • 1 tbsp honey

  • 1 tbsp ginger, grated

  • 2 garlic cloves, minced

  • 1/4 cup fresh cilantro, chopped


Preparation

Step 1. Cook rice noodles according to package instructions. Drain and set aside.


Step 2. In a small bowl, whisk together peanut butter, soy sauce, lime juice, honey, ginger, and garlic.


Step 3. In a large skillet, sauté mixed vegetables over medium heat until tender, about 5-7 minutes.


Step 4. Add cooked noodles and peanut sauce to the skillet. Toss to combine and heat through.


Step 5. Garnish with fresh cilantro and serve.
