Veggie Burgers with Sweet Potato Fries

Ingredients

  • 2 large sweet potatoes, cut into fries

  • 2 tbsp olive oil

  • 1 can black beans, rinsed and drained

  • 1 cup cooked quinoa

  • 1/2 cup breadcrumbs

  • 1 egg

  • 1 tsp cumin

  • 1 tsp paprika

  • Salt and pepper to taste

  • Whole wheat buns

  • Lettuce, tomato, and condiments for serving


Preparation

Step 1. Preheat oven to 425°F (220°C).


Step 2. Toss sweet potato fries with olive oil, salt, and pepper. Spread on a baking sheet and bake for 25-30 minutes until crispy.


Step 3. In a bowl, mash black beans with a fork. Add cooked quinoa, breadcrumbs, egg, cumin, paprika, salt, and pepper. Mix well.


Step 4. Form mixture into patties. Heat a skillet over medium heat and cook patties for 5-7 minutes on each side until browned.


Step 5. Serve veggie burgers on whole wheat buns with lettuce, tomato, and your favorite condiments. Serve with sweet potato fries.
