Ingredients
1 large cauliflower head, grated
1/2 cup mozzarella cheese, shredded
1/4 cup Parmesan cheese, grated
1 egg
1 tsp dried oregano
1 cup tomato sauce
1 cup mixed vegetables (bell peppers, onions, mushrooms), chopped
Fresh basil for garnish
Preparation
Step 1. Preheat oven to 425°F (220°C).
Step 2. Microwave grated cauliflower for 5-7 minutes until tender. Let cool.
Step 3. In a bowl, combine cauliflower, mozzarella cheese, Parmesan cheese, egg, and oregano. Mix well.
Step 4. Press mixture onto a parchment-lined baking sheet to form a crust. Bake for 15-20 minutes until golden brown.
Step 5. Spread tomato sauce over the crust and top with mixed vegetables.
Step 6. Bake for another 10-15 minutes until vegetables are tender.
Step 7. Garnish with fresh basil and serve.
