Black Bean Tacos with Avocado Crema

Ingredients

  • 1 can black beans, rinsed and drained

  • 1 tbsp olive oil

  • 1 tsp cumin

  • 1 tsp paprika

  • Salt and pepper to taste

  • 8 whole wheat tortillas

  • 1 avocado

  • 1/2 cup Greek yogurt

  • 1 lime, juiced

  • 1 cup shredded lettuce

  • 1 cup cherry tomatoes, halved


Preparation

Step 1. Heat olive oil in a skillet over medium heat. Add black beans, cumin, paprika, salt, and pepper. Cook for 5-7 minutes until heated through.


Step 2. In a blender, combine avocado, Greek yogurt, and lime juice. Blend until smooth.


Step 3. Warm tortillas in a dry skillet or microwave.


Step 4. Assemble tacos by adding black beans, shredded lettuce, cherry tomatoes, and a drizzle of avocado crema to each tortilla. Serve.
