About the Recipe
Ingredients
1 block firm tofu, drained and cubed
2 tbsp soy sauce
1 tbsp olive oil
2 cups mixed vegetables (carrots, bell peppers, broccoli), chopped
2 garlic cloves, minced
1 tbsp ginger, grated
1 tbsp hoisin sauce
Cooked rice for serving
Preparation
Step 1. Marinate tofu in soy sauce for at least 15 minutes.
Step 2. Heat olive oil in a skillet over medium-high heat. Add tofu and cook until golden brown on all sides, about 5-7 minutes. Remove from skillet and set aside.
Step 3. In the same skillet, add mixed vegetables, garlic, and ginger. Stir-fry until vegetables are tender, about 5-7 minutes.
Step 4. Add tofu back to the skillet along with hoisin sauce. Stir to combine and heat through.
Step 5. Serve stir-fry over cooked rice.
